Oriental Pork
Ingredients
1 ½ c. cooked rice
1 lb. pork cut into cubes
2 TBS. oil
3 TBS. cornstarch
2 c. water (used drained fruit juice with water)
1 TBS. soy sauce
3 TBS. prepared mustard
2 T vinegar
¼ c. molasses
½ tsp. ginger
1 can drained pineapple chunks
1 can drained mandarin oranges
1 large pepper cut in pieces
Directions
Spread cooked rice in a 3 quart casserole dish. In a pan, brown pork in oil. Combine in a bowl the cornstarch, water (with the juices), soy sauce, mustard, vinegar, molasses, and ginger and mix. Pour over the pork in the pan and cook until thickened and clear on medium heat. Cover and simmer for 15 minutes on low until pork is cooked. Add pineapple, oranges, and green peppers. Simmer 5 more minutes. Pour over rice and bake 350 degrees for 30 min. or until hot. Serves 8–10 people.
